Water | 1/2 cup |
Diced Tomatoes (drained) | 1 can (14.5 oz) |
Black Beans (rinsed and drained) | 1 can (15 oz) |
Frozen Corn Kernels (thawed) | 1 cup |

Milk | 1/3 cup |

Chopped Green Onions (for garnish) | 1/2 cup |
Chopped Cilantro (optional, for garnish) | 1/4 cup |
Instructions:
- Preheat and Prepare: Preheat your oven to 400°F and grease a 9×13 inch baking dish for the perfect bake.
- Cook Ground Beef: In a large skillet over medium heat, cook the ground beef until it’s no longer pink. Drain off any excess fat for a lean and flavorful base.
- Infuse Taco Seasoning: Stir in the taco seasoning and water, letting it simmer for a few minutes until it thickens slightly, infusing the meat with bold flavors.
- Add Vegetables: Incorporate diced tomatoes, black beans, and corn into the mix, cooking for an additional 2-3 minutes until everything is heated through. Spread this flavorful mixture evenly into your baking dish.
- Prepare Cornbread Batter: In a bowl, mix corn muffin mix, egg, and milk just until combined. Spoon the cornbread batter over the beef mixture, ensuring a harmonious blend.
- Bake to Perfection: Bake for about 15 minutes, then sprinkle shredded cheddar cheese evenly over the cornbread layer. Continue baking for another 10-15 minutes until the cornbread is done and the cheese is bubbly.
- Garnish and Serve: Let the bake stand for a few minutes before serving. Garnish with chopped green onions and optional cilantro for a visually stunning and fresh finish.
