Egg and sausage muffins


  • 1 tbsp butter
  • 1/2 onion, chopped
  • 1/2 bell pepper, chopped
  • 1 carrot, chopped
  • 1/2 tsp salt
  • 3 sausages, chopped
  • 4 eggs
  • 50 ml of milk (1/5 cup)
  • 1/2 tsp pepper
  • Parsley, chopped
  • 50g mozzarella cheese, shredded.


In a pan add butter and onion, fry for a few minutes, and add carrots, pepper, salt, and black pepper.

In a bowl mix together eggs with milk, salt, and pepper, and add vegetable mixture and parsley.

Put chopped sausages into the muffin mold and fill with egg mixture, sprinkle with shredded mozzarella cheese.

Bake at 180°C (360°F) for 20 minutes.
