LOADED CAULIFLOWER BAKE: A HEALTHY INDULGENCE

Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of sour cream (you can use Greek yogurt as a healthier substitute)
  • 1/4 cup of chopped green onions
  • 1/4 cup of crumbled cooked bacon (you can use turkey bacon for a leaner option)
  • 2 tablespoons of butter
  • Salt and pepper to taste
  • Instructions:
    1. Preheat your oven to 375°F (190°C).
    2. In a large pot of boiling water, blanch the cauliflower florets for 3-4 minutes, just until they start to become tender. Drain them and set aside.
    3. In a small saucepan, melt the butter over low heat.
    4. In a mixing bowl, combine the sour cream (or Greek yogurt) and half of the shredded cheddar cheese. Mix until well combined.
    5. Pour the melted butter over the cauliflower florets and toss to coat them evenly.
    6. Season the cauliflower with salt and pepper to taste.
    7. In a baking dish, spread out the cauliflower in an even layer.
    8. Spoon the sour cream and cheese mixture over the cauliflower.
    9. Sprinkle the remaining shredded cheddar cheese on top.
    10. Bake in the preheated oven for about 15-20 minutes or until the cauliflower is tender and the cheese is bubbly and slightly browned.
    11. Remove from the oven and top with chopped green onions and crumbled bacon.
    12. Serve hot and enjoy!
