Cajun Shrimp Deviled Eggs
Ingredients
- 12 hard-boiled eggs, peeled
- 1/4 cup mayonnaise
- 2 teaspoons hot sauce, such as Tabasco
- 2 tablespoons sweet relish
- 3 teaspoons Old Bay seasoning, divided
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- 24 medium shrimp, peeled and deveined
- 1 tablespoon olive oil
- 3 tablespoons fresh dill, chopped
Instructions
- Cut the eggs in half lengthwise and scoop out the yolks into a medium bowl. Mash the yolks with a fork until smooth. Add the mayonnaise, hot sauce, relish, 2 teaspoons of Old Bay seasoning, garlic powder, salt and pepper and mix well. Taste and adjust seasoning if needed.
- In a large skillet over medium-high heat, heat the oil and add the shrimp. Sprinkle with the remaining Old Bay seasoning and cook, turning once, until pink and cooked through, about 5 minutes. Transfer to a plate and let cool slightly.
- Spoon or pipe the yolk mixture evenly into the egg white halves. Top each deviled egg with a shrimp and sprinkle with some dill. Refrigerate until ready to serve or enjoy right away.
