Cajun Shrimp Deviled Eggs

Ingredients

  • 12 hard-boiled eggs, peeled
  • 1/4 cup mayonnaise
  • 2 teaspoons hot sauce, such as Tabasco
  • 2 tablespoons sweet relish
  • 3 teaspoons Old Bay seasoning, divided
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 24 medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 3 tablespoons fresh dill, chopped

Instructions

  1. Cut the eggs in half lengthwise and scoop out the yolks into a medium bowl. Mash the yolks with a fork until smooth. Add the mayonnaise, hot sauce, relish, 2 teaspoons of Old Bay seasoning, garlic powder, salt and pepper and mix well. Taste and adjust seasoning if needed.
  2. In a large skillet over medium-high heat, heat the oil and add the shrimp. Sprinkle with the remaining Old Bay seasoning and cook, turning once, until pink and cooked through, about 5 minutes. Transfer to a plate and let cool slightly.
  3. Spoon or pipe the yolk mixture evenly into the egg white halves. Top each deviled egg with a shrimp and sprinkle with some dill. Refrigerate until ready to serve or enjoy right away.

Enjoy your cajun shrimp deviled eggs!
