Butter and caramel cheesecake

Butter and caramel cheesecake: creamy and irresistible!


For the base:

  • 400g biscuits
  • 200g (3/4 cup) butter, melted

For the cream:

  • 100g (1 cup) powdered sugar
  • 3 whole eggs
  • 1 yolk
  • 500g mascarpone
  • 250g cream cheese
  • 150g peanut butter

For the caramel:

  • 200g (1 cup) sugar 
  • 130ml (1/2 cup) cream 
  • 100g butter
  • 1/2 tsp salt


1. In a bowl mix together crushed biscuits and melted butter.

2. Transfer to the baking pan. In another bowl mix together mascarpone cheese, cream cheese, sugar powder, eggs, yolk, and peanut butter.

3. Transfer to the pan and bake at 160°C (320°F) for 70 minutes.

4. In the pan add sugar, once melted add in warm cream, turn off the heat, and add butter and salt.

5. Pour onto the cooled cheesecake.
