Ultra Rolled Cookie

: For the rolled cookie


  4 eggs

 100g of sugar

 50g flour

 40g cornstarch

 20g unsweetened cocoa powder

: The ganache



 200g chocolate

 20 cl of full liquid cream

 30g unsalted butter

 Whip the egg whites with the sugar

 snow, add the yolks one by one

 Add the sifted flour, cornstarch and

 Cocoa Powder

 Spread the mixture on a baking sheet

 lightly greased then cook in

 a preheated oven at 180°C for 8 minutes

 no more

 out of the oven, gently unmold and

 wrap the biscuit in a cloth and leave

  cool

: The creamy ganache

 Melt the chocolate with the butter or bath

 married

 Whip the crème fraiche into a stiff whipped cream

 Once the chocolate has melted, add

 delicately and in several times the whipped cream,

 to obtain a good chocolate mousse

 homogeneous

 Spread this whipped ganache on the biscuit

 Wrap gently

 For the decoration, it is chocolate ganache

 with milk, leave in the refrigerator before serving
